Savory & Easy Pot Roast
A POPULAR DISH FOR any lover of a savory and hearty meal, THIS Pot Roast meal is specially crafted with lots of vegetables and is the perfect main course.
Ingredients List:
2 LBs - Room temperature Chuck Roast of your choice
1 LB - Baby Potatoes (I used Idaho potatoes but my absolute favorite are the red ones.) A few are for your soup and the rest are for your mashed potatoes.
1 LB - Carrots
1 LB - Cremini mushrooms
1 Whole Onion
4 Cups - Beef stock
2 Cups of Red Wine (cooking is best)
Black pepper
Kosher or Sea Salt
Rosemary or Thyme springs
3 tbsps - Cornstarch
Olive Oil or Butter
Instructions:
Step one:
Season your meat of choice (we are a beef family) with salt and pepper and let it sit for a few minutes.
Cut up the meat until it’s the desired size that you like.
Prep your veggies by cutting up your onions, mushrooms, and carrots.
Step two:
Using a medium pot over medium-high heat, melt or glaze butter or your choice of oil until the pot is fully saturated.
Add the meat to the pot until it starts to brown and become fragrant. Then add your onion slices and continue until they are both starting to caramelize together.
In a separate pot, boil some water with salt and add the potatoes that will be turned into your mashed potatoes.
Let them completely boil and turn soft. Strain them and let them cool enough to smash them. These don’t need much seasoning. All of the flavors will be coming from the stew.
Step three:
Add your veggies (carrots, potatoes, and herbs with your meat and onions and let them cook together for a few minutes. We want half-cooked.
Step four:
Add the red wine and stir, making sure that the wine reaches the bottom of the pot and deglazes it. Let it simmer for 4 minutes or so.
Add the beef stock and let it come to a boil.
Step five:
Whisk the tablespoons of cornstarch with equal amounts of water in a small bowl until it turns into a smooth mixture. Then stir in mixture into the stew.
Step six:
Add the mushrooms to the stew and let them soften. The soup should be completely done by this step and we are only waiting for the mushrooms to cook and soften.
Step seven:
Turn off the pot, and you are done. Add the mashed potatoes to the bowl, and add in the stew.
I grate some fresh parmesan to add to the stew with slices of butter. Enjoy.
